2005 Coonawarra Cabernet Sauvignon
Our 8 rows of our grower’s cabernet sauvignon vineyard in the heart of Coonawarra, covering an area of 1.88 acres, performed very well in 2005, despite it being a very hot year. Low cropped fruit came to the fore in such conditions. We blended it with some lovely merlot (6%) and petit verdot (5%) to create another classy Will Taylor Coonawarra Cabernet.
Dark red/purple hue. Classic Coonawarra cabernet nose, showing rich blackberry, cassis, violet and dusty tannin/oak aromas. Very fresh, ripe vibrant palate for a 5 year old red closed with a cork. Youthful. Great structure. Rich juicy palate with hints of tea and cedar, amidst the mulberry and blackberry fruit, encased by some lovely soft tannins that make you hungry. Perfectly integrated oak easily swallowed by the copious fruit.
Like all our cabernets, would be great with roast lamb and mint sauce, but could also handle a classy steak with a rich marinade without any problem.
The wine should benefit from many years in the cellar, but is a great drink right now.
